Banana Bread Recipe

            As the weather cools and the leaves start to change, there are certain traditions that happen. One of those are the fall recipes. There’s nothing better than a cozy dessert to warm your heart during the chilly season. One of my favorite recipes is banana bread. It has been a staple in my house for a long time. 

Best Ever Banana Bread:

  • 1 & 3/4 cups all purpose flour

  • 1 & 1/2 cups sugar

  • 1 teaspoon baking soda 

  • ½ teaspoon salt

  • 2 eggs

  • 2 medium, ripe bananas, mashed (1 cup)

  • 1/2 cup canola oil

  • 1/4 cup +1 tablespoon buttermilk

  • 1 teaspoon vanilla extract

  • 1 cup chopped walnuts (optional)

Directions:

  • In a large bowl, stir together flour, sugar, baking soda, and salt. In  another bowl, combine the eggs, bananas, oil, buttermilk, and vanilla; add flour mixture, stirring just until combined. Fold in nuts.

  • Pour into a greased 9” x 5” loaf pan. Bake at 325 for one hour and 20 minutes or until a toothpick comes out clean. Cool on a wire rack. Yield: 1 loaf

Nutrition Facts: One serving equals 255 cal, 12 g of fat, 27 mg cholesterol, 166 mg sodium, 34 g carbohydrate, 1 g fiber, 4 G protein. 

This goes great for Thanksgiving, Christmas, or even just a cozy breakfast. 

            Another staple for the fall season is pumpkin muffins with cream cheese filling. These muffins are full of that warming spice that makes you want to curl up in a blanket. They are light and airy and easy to make!

Pumpkin muffins

  • 1 box yellow cake mix

  • 3 eggs

  • ½ cup oil

  • 1 teaspoon baking soda

  • 1-2 teaspoon(s) cinnamon

  • 1 20 ounce can pumpkin

Directions :

  • Mix all ingredients together

  • Bake muffins at 375 for 12 to 15 minutes

Cream Cheese Filling

  •  8 ounce package cream cheese

  • ½ cup confectioners sugar

  • 1/4 cup milk

Directions:

  • And a large bowl, combine cream cheese, sugar, and milk

  • Beat with mixer until blended

  • Refrigerate until ready to use

No matter the occasion, fall related or not, these pumpkin muffin and banana bread recipes are great heartwarming desserts that will take your taste buds back to the cozy season of fall.
