Saint Patrick’s Day is notorious for the color green and fun get-togethers. With Saint Patty’s Day right around the corner, I figured I would give out two of my favorite festive, green recipes.
1. Leprechaun Parfaits
Ingredients:
Pudding Mix
Mint Oreos
Mini Pretzels
Whipped cream
Chocolate Syrup
Green Food Dye
Directions:
Make pudding according to package directions. Before chilling the pudding, add food dye and mix. Chill in the refrigerator until ready to use.
Add oreos to a gallon ziplock bag and smack with a rolling pin. Set aside.
Add pretzels to a ziplock bag and smack with a rolling pin.
Once the oreos and pretzels are crushed up and powdery, remove the pudding from the fridge.
Layer the pudding, oreos, and pretzels in a parfait glass.
Add whipped cream and chocolate syrup to the top and serve.
2. Green Velvet Cupcakes
Ingredients:
CAKE
2 1/2 cups all purpose flour
2 cups sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz green food coloring
CREAM CHEESE FROSTING
1 package of softened cream cheese
1/4 cup softened butter
1 teaspoon vanilla extract
1 bag powdered sugar 2 lb bag
Milk as needed
Directions:
Cake:
Preheat your oven to 350 degrees.
Line your cupcake tins with cupcake liners. .
Lightly stir eggs in a medium bowl with whisk. Add in remaining liquid ingredients. Whisk until blended, the stir in food coloring and sit aside.
Place all dry ingredients in your mixing bowl and stir together well.
Pour your wet ingredients into your dry ingredients and mix on medium-high for about a minute.
Pour the batter into cake pans or cupcake pans.
Bake for approximately 14 minutes or until a toothpick inserted into the center comes out clean. Icing:
Cream together cream cheese, butter and vanilla in a bowl until smooth.
Gradually add in powdered sugar and continue mixing.
Add green food coloring if desired.
Add in milk as needed to reach the desired consistency.
Store frosting and frosted cupcakes in refrigerator.
Garnish cupcakes with desired toppings.
